Prepare the Chicken
- Pat the chicken breasts dry with paper towels and place them in an even layer at the bottom of the slow cooker.
- Pour the salsa evenly over the chicken.
- Sprinkle the entire packet of taco seasoning evenly over the salsa and chicken. Do not stir.
Slow Cook
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours. Avoid lifting the lid during cooking.
- Check that the thickest part of the chicken has reached an internal temperature of 165°F (74°C).
Shred and Serve
- Shred the cooked chicken directly in the slow cooker using two forks or shredding claws.
- Stir the shredded chicken into the salsa and cooking juices until evenly coated.
- Taste and adjust the seasoning if needed. Add a pinch of salt or a squeeze of fresh lime juice, if desired.
- Spoon the chicken into warmed corn or flour tortillas and finish with your favorite toppings, such as cilantro, diced onions, avocado, shredded cheese, and lime wedges.
- For deeper flavor, optionally wrap the assembled tacos in foil and let them rest for 5 minutes before serving.
Notes
- Cooking time: Cook on LOW for 6–8 hours or on HIGH for 3–4 hours. The recipe-card time reflects the minimum LOW cooking time.
- Food safety: Do not rinse raw chicken. Pat it dry with paper towels and wash your hands and any contacted surfaces afterward.
- Check doneness: Chicken is safely cooked when its thickest part reaches 165°F (74°C).
- Avoid overcooking: Begin checking the chicken near the lower end of the cooking range to prevent it from becoming dry.
- Shredding: Shred the chicken directly in the crockpot so it absorbs the salsa and cooking juices while reducing cleanup.
- Salsa: Fresh salsa provides excellent flavor, but jarred salsa also works. Adjust the heat level to your preference.
- Frozen chicken: For the most reliable and even cooking, thaw chicken breasts before placing them in the slow cooker.
- Instant Pot variation: Add the chicken, salsa, and seasoning to the pressure cooker. Cook on HIGH pressure for 15 minutes, release the pressure according to the manufacturer’s instructions, shred the chicken, and use the sauté setting briefly if the sauce needs reducing.
- Gluten-free option: Use certified gluten-free taco seasoning and corn tortillas.
