Cheesy Bake-and-Forget Chicken Alfredo Pasta

Some nights you just need dinner to cook itself. Stir it together, slide it into the oven, and walk away.

Ingredients
  

The pasta and chicken
  • 1 box short pasta rotini, penne or corkscrew
  • 2-3 cups cooked chicken
The creamy part
  • 2 jars Alfredo sauce
  • 1 carton chicken broth
The seasoning
  • onion powder
  • garlic powder
  • dried minced onion
  • Italian seasoning
  • salt and pepper
The toppings
  • mozzarella
  • Parmesan
Optional extras
  • bacon bits, frozen peas, broccoli or mushrooms use whatever you have

Method
 

  1. Grease a 9x13 baking dish.
  2. Add everything except the cheese: pasta, chicken, broth, Alfredo and all the seasonings.
  3. Stir well, then taste the liquid and adjust the seasoning.
  4. Cover tightly and bake at 425°F for 45 to 55 minutes.
  5. Take it out, give it a stir, and cover the top with mozzarella and Parmesan.
  6. Bake uncovered for about 10 minutes.
  7. Switch to broil for a minute or two, until the top is golden. Watch it closely so it doesn't burn.

Notes

Cover the dish tightly with foil so the pasta cooks evenly and doesn't dry out. Leftovers get thick, so stir in a splash of milk or broth when you reheat. Serve with garlic bread or a simple salad to balance the richness.
