Broth
  • 15 oz crushed or diced tomatoes
  • 2 tablespoons tomato paste
  • 1 carton chicken broth
To Finish
  • 1 package cheese tortellini standard-size package
  • 3-4 handfuls fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese grated, plus more for serving
  • breadsticks optional, for serving

Method
 

Cook the Beef
  1. Add the ground beef, chopped onion, and minced garlic to a large pot or Dutch oven over medium heat.
  2. Cook, breaking the beef into crumbles, until the meat is completely browned and the onion has softened. Drain excess grease if needed.
  3. Stir in Italian seasoning, basil, oregano, salt, black pepper, and red pepper flakes to taste.
Make the Soup
  1. Add the crushed or diced tomatoes, tomato paste, and chicken broth. Stir well to combine.
  2. Bring the soup to a gentle simmer.
  3. Add the cheese tortellini and cook according to the package directions until tender.
Finish the Soup
  1. Remove the pot from the heat.
  2. Stir in the fresh spinach, heavy cream, and Parmesan cheese until the spinach wilts and the broth becomes creamy.
  3. Taste and adjust the seasoning if needed. Do not allow the soup to boil after adding the cream.
  4. Ladle into bowls, top with additional Parmesan if desired, and serve hot with breadsticks.

Notes

The tortellini will absorb some of the broth while stored. Add a splash of chicken broth or water when reheating leftovers.
Ground Italian sausage or ground turkey can be substituted for the ground beef.
Do not let the soup boil after adding the heavy cream, as the cream may separate.
