Ingredients
  

  • 1 1/2 pounds sirloin steak or ribeye cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter divided
  • 4 cloves garlic minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 1 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

  1. Pat the steak cubes completely dry with paper towels, then season generously with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Once the skillet is hot, add half of the steak cubes in a single layer, leaving space between the pieces.
  4. Cook the steak for about 2 minutes without moving it, then flip and cook for another 1 to 2 minutes, or until browned to your preferred doneness.
  5. Transfer the cooked steak bites to a plate and repeat with the remaining steak cubes.
  6. Reduce the heat to medium.
  7. Add 2 tablespoons of the butter to the skillet. Stir in the minced garlic, thyme, and rosemary.
  8. Cook the garlic and herbs for about 30 seconds, stirring frequently, until fragrant.
  9. Return all of the steak bites to the skillet and toss them in the garlic butter. Add the remaining 2 tablespoons of butter.
  10. Stir and toss until the butter is melted and the steak bites are evenly coated and glossy.
  11. Garnish with freshly chopped parsley and serve immediately.

Notes

Pat the steak dry before cooking to help it develop a deep golden-brown sear.
Cook the steak in batches rather than overcrowding the skillet so the pieces sear instead of steam.
Fresh thyme and rosemary can be replaced with 1/2 teaspoon dried thyme and 1/2 teaspoon dried rosemary.
Serve with mashed potatoes, rice, or roasted vegetables.
