Prepare and Marinate the Steak
- Cut the steak into approximately 1–1 1/2-inch bite-sized pieces.
- Place the steak bites in a large mixing bowl. Add 1 teaspoon olive oil, soy sauce, onion powder, garlic powder, and black pepper.
- Toss until every piece of steak is evenly coated with the marinade and seasonings.
- Set the steak aside to marinate for 15–30 minutes.
Prepare the Potatoes
- Wash and peel the Russet potatoes, then cut them into approximately 1-inch pieces.
- Rinse the diced potatoes under cold water, then pat them very dry with paper towels.
- Place the potatoes in a small bowl. Drizzle with 1 teaspoon olive oil and sprinkle with the seasoned salt.
- Toss until the potatoes are evenly coated.
Air Fry the Potatoes
- Preheat the air fryer to 400°F (200°C).
- Add the seasoned potatoes to the air fryer basket in an even layer.
- Air fry for 15–20 minutes, or until golden and fork-tender, tossing or shaking the basket every 5 minutes to promote even browning and prevent burning.
Cook the Steak Bites
- Heat a large skillet, preferably cast iron, over medium-high heat.
- Add the steak bites in a single layer. Work in batches if necessary so the skillet is not overcrowded.
- Cook the steak for approximately 2–3 minutes on the first side, or until a browned crust develops.
- Flip the steak bites and continue cooking until they reach your preferred level of doneness.
Serve
- Serve the hot steak bites with the crispy air-fried potatoes.
Notes
- Yield: The original recipe does not provide a serving yield, so the servings field has been left blank.
- Marinating time: Marinate the steak for 15–30 minutes. Including this step, the recipe takes approximately 45–60 minutes from start to finish.
- Steak options: Ribeye, New York strip, or sirloin may be used. Cut the steak into similarly sized pieces so it cooks evenly.
- Garlic butter: The original ingredient list includes 6 tablespoons butter and 1 tablespoon minced garlic, but the provided instructions do not explain when or how to add them. They have therefore been preserved in the ingredient list without inventing an unsupported cooking step.
- Potatoes: Dry the rinsed potato pieces thoroughly before air frying. Removing surface moisture helps them become crisp.
- Air fryer: Toss or shake the potatoes every 5 minutes so they brown evenly.
- Searing: Avoid overcrowding the skillet. Cook the steak in batches if necessary so the pieces sear instead of steaming.
- Steak temperature: Use an instant-read thermometer when precise doneness is important. Whole cuts of beef are considered safely cooked at 145°F (63°C) followed by a 3-minute rest.
- Storage: Refrigerate cooled leftovers in an airtight container for up to 3–4 days.
- Reheating: Reheat the potatoes in an air fryer for the best texture and warm the steak briefly in a skillet to avoid overcooking it.
