Heat the Milk
- Pour the milk into a small saucepan and heat over medium-low heat until hot and almost simmering. Do not allow the milk to boil.
Prepare the Pumpkin Espresso
- Prepare the espresso and pour it into a large mug. Alternatively, use 1/2 cup of hot freshly brewed coffee.
- Add the pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract to the mug.
- Stir or whisk until the pumpkin mixture is smooth and fully combined with the espresso.
Froth and Assemble
- Froth the hot milk for approximately 30 seconds, or until it becomes light and foamy.
- Slowly pour the hot milk into the mug over the pumpkin espresso mixture, reserving some of the foam.
- Spoon the reserved milk foam over the top of the latte.
- Top with whipped cream, if desired, and sprinkle with additional pumpkin pie spice or cinnamon. Serve immediately.
Notes
- Pumpkin puree: Use plain pumpkin puree rather than sweetened pumpkin pie filling. Begin with 1 tablespoon and increase to 2 tablespoons for a stronger pumpkin flavor.
- Coffee substitute: Replace the two espresso shots with 1/2 cup of strong, hot freshly brewed coffee.
- Milk: Oat milk is recommended because it creates a creamy texture and froths well, but dairy milk, almond milk, soy milk, or another preferred milk may be used.
- Sweetness: Begin with 1 tablespoon of maple syrup, taste the latte, and add more as needed.
- Homemade pumpkin pie spice: Substitute 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1/8 teaspoon ground ginger, and 1/8 teaspoon ground cloves or allspice.
- No frother: Whisk the hot milk vigorously, blend it carefully, or shake warm milk in a tightly sealed heat-safe jar until foamy.
- Serving: This latte is best served immediately while hot and foamy.
