Method
- Peel the sweet potatoes and cut them into bite-size chunks.
- Add the sweet potato chunks to a bowl and toss with a little olive oil spray, salt, and smoked paprika.
- For the air fryer method, arrange the sweet potato chunks in a single layer in the air fryer basket. Air fry at 200°C for 15 to 20 minutes, tossing halfway through, until crisp and tender.
- For the oven method, preheat the oven to 200°C / Fan 180°C / Gas Mark 6 / 392°F. Arrange the sweet potato chunks in a single layer on a baking sheet and roast for 20 to 25 minutes, turning halfway through, until crisp.
- While the sweet potatoes cook, lightly spray a frying pan with olive oil and place it over medium-high heat.
- Add the lean beef mince and taco seasoning.
- Break up the beef with a spatula and cook, stirring regularly, until browned and starting to caramelise around the edges. Remove from the heat.
- Steam the tenderstem broccoli for 3 to 4 minutes until tender. Alternatively, add it to the air fryer during the final 5 minutes of the sweet potato cooking time for a more charred texture.
- Divide the cooked sweet potato and seasoned beef evenly between two bowls.
- Divide the tenderstem broccoli between the bowls.
- Add the sliced avocado and cottage cheese evenly between the two servings.
- Drizzle the bowls with hot honey and serve immediately.
Notes
This recipe uses 5% fat lean beef mince.
The sweet potatoes can be cooked in either the air fryer or oven.
Tenderstem broccoli can be steamed or added to the air fryer for the final 5 minutes for a more charred, crunchy texture.
This recipe is naturally gluten free when using gluten-free taco seasoning and hot honey.
