Cook the Chicken
- Season the chicken thighs with the Italian seasoning, paprika, salt, and ground black pepper.
- Heat the olive oil in a large skillet or pot over medium-high heat.
- Cook the chicken thighs for about 5 minutes on each side, until browned and fully cooked. Make sure the internal temperature reaches 165°F (74°C).
- Remove the chicken from the skillet and set it aside.
Make the Creamy Gnocchi
- Add the diced onion to the same skillet. Sauté until translucent, adding a small drizzle of olive oil if needed.
- Add the sliced mushrooms, minced garlic, Italian seasoning, paprika, salt, and black pepper. Stir to combine.
- Cook until the mushrooms release their moisture and soften.
- Add the chicken broth, heavy cream, and potato gnocchi. Stir well and simmer over medium-low heat for 5 minutes.
- Stir in the shredded Parmesan cheese and fresh spinach.
Finish and Serve
- Return the chicken thighs to the skillet. Reduce the heat to low, cover, and cook for 5 minutes, until the sauce is bubbling around the chicken.
- Garnish with fresh parsley and additional Parmesan cheese, if desired.
- Serve hot, spooning the creamy sauce and gnocchi over the chicken.
Notes
Add a drizzle of olive oil while sautéing the onion if more is needed.
More Parmesan cheese may be added as a garnish, if desired.
