One Pan Creamy Chicken and Gnocchi

Tender chicken thighs, pillowy potato gnocchi, mushrooms, and spinach simmered in a rich Parmesan cream sauce. This easy one-pan dinner is ready in just 30 minutes.

Ingredients
  

Chicken Thighs
  • 4 boneless skinless chicken thighs
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tbsp olive oil
Creamy Sauce and Gnocchi
  • 16 oz potato gnocchi
  • 1 cup baby bella mushrooms sliced
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup Parmesan cheese freshly shredded
  • 2 cups fresh spinach
  • fresh parsley for garnish

Equipment

  • 1 Cast Iron Skillet or a large skillet or pot
  • 1 Meat Thermometer

Method
 

Cook the Chicken
  1. Season the chicken thighs with the Italian seasoning, paprika, salt, and ground black pepper.
  2. Heat the olive oil in a large skillet or pot over medium-high heat.
  3. Cook the chicken thighs for about 5 minutes on each side, until browned and fully cooked. Make sure the internal temperature reaches 165°F (74°C).
  4. Remove the chicken from the skillet and set it aside.
Make the Creamy Gnocchi
  1. Add the diced onion to the same skillet. Sauté until translucent, adding a small drizzle of olive oil if needed.
  2. Add the sliced mushrooms, minced garlic, Italian seasoning, paprika, salt, and black pepper. Stir to combine.
  3. Cook until the mushrooms release their moisture and soften.
  4. Add the chicken broth, heavy cream, and potato gnocchi. Stir well and simmer over medium-low heat for 5 minutes.
  5. Stir in the shredded Parmesan cheese and fresh spinach.
Finish and Serve
  1. Return the chicken thighs to the skillet. Reduce the heat to low, cover, and cook for 5 minutes, until the sauce is bubbling around the chicken.
  2. Garnish with fresh parsley and additional Parmesan cheese, if desired.
  3. Serve hot, spooning the creamy sauce and gnocchi over the chicken.

Notes

Add a drizzle of olive oil while sautéing the onion if more is needed.
More Parmesan cheese may be added as a garnish, if desired.
