One Pan Garlic Chicken Orzo

Creamy, cheesy garlic chicken orzo baked in a single 9 x 13 dish. Raw orzo, broth, cream, spinach, and chicken go in together, then the oven does the work.

Ingredients
  

  • 1 cup orzo uncooked
  • 1 3/4 cups chicken broth
  • 1/2 cup heavy cream
  • 3-4 boneless chicken breasts
  • 2 cups fresh spinach
  • 1/2 cup parmesan
  • 1 cup shredded mozzarella
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1 tbsp olive oil

Method
 

  1. Preheat the oven to 400°F.
  2. In a 9 x 13 baking dish, add the uncooked orzo, chicken broth, heavy cream, minced garlic, lemon juice, salt, pepper, and Italian seasoning.
  3. Add the fresh spinach and place the chicken breasts on top.
  4. Drizzle the olive oil over the chicken.
  5. Cover tightly with foil and bake for 30 minutes.
  6. Remove the foil and add the parmesan and shredded mozzarella.
  7. Bake uncovered for another 5-10 minutes, until bubbly and the chicken is done.

Notes

Bake covered for the first 30 minutes, then uncovered for another 5-10 minutes. Add the parmesan and mozzarella after removing the foil. Chicken is done at 165°F in the thickest part. Let the dish rest a few minutes before serving so the sauce tightens up.
