- 1 cup sour cream
- 1½ cups shredded cheddar cheese
- 1 (14 oz) can green chiles
For the queso:
- 16 oz Velveeta Queso Blanco
- 1 (10 oz) can Rotel tomatoes
For stacking:
- 6 burrito-size flour tortillas
How to Make It
- Heat your oven to 375°F and grease a 9×13-inch baking dish.
- In a big bowl, stir together the chicken, taco seasoning, sour cream, cheddar and green chiles until it looks creamy and well mixed.
- Tear or trim the tortillas so they fit the dish.
- Chop the Velveeta into chunks and put them in a skillet with the Rotel. Cook on medium-low, stirring often, until it’s fully melted and smooth.
- Spread a thin layer of queso on the bottom of the dish. Add a layer of tortillas, then half the chicken mixture, then more queso.
- Repeat the layers until everything is used up. Finish with a generous pour of queso on top.
- Bake at 375°F for 25 to 30 minutes, until it’s bubbling at the edges and hot all the way through.
- Let it sit for 5 to 10 minutes before cutting.

Stir the queso the whole time it melts. Walk away for a minute and it sticks and scorches on the bottom of the skillet.
No cooked chicken? Grab a rotisserie chicken from the store. Pull it, shred it, done.
Don’t skip the rest time. Cut it straight out of the oven and the layers slide apart. Five to ten minutes and it holds a clean square.
Leftovers keep in the fridge for up to 3 days. Reheat a slice covered with foil so it doesn’t dry out.
Variations
Swap in ground beef for the chicken. Brown it, drain it, same amount, same seasoning. Works fine.
Add a can of drained black beans to the chicken mix for more bulk.
Corn tortillas? I’d skip it. They get gummy in this much sauce and flour tortillas hold together better.
Make-Ahead Notes
Shred the chicken and mix the filling a day early. That part’s fine.
Don’t make the queso ahead and layer it cold. It sets up stiff and won’t spread. Melt it right before you stack. You can assemble the whole pan and bake straight away, or cover and refrigerate it for a few hours, then add a few minutes to the bake.
