Chicken
  • 4 boneless skinless chicken breasts

Soup

  • 1 tablespoon chicken bouillon
  • 1 can black beans
  • 1 can corn
  • 1 can Rotel
  • 1 can tomato sauce
  • 1 block cream cheese
  • 8 oz Colby cheese shredded

Method
 

Cook the Chicken
  1. Season the chicken breasts with smoked paprika, roasted garlic powder, onion powder, cayenne pepper, cumin, chili powder, oregano, salt, and black pepper to taste. Toss until evenly coated.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken and cook until fully cooked through.
  3. Remove the chicken from the pot, shred it with two forks, and set aside.
Make the Soup
  1. Add the diced jalapeño, onion, and minced garlic to the same pot.
  2. Add the butter while the vegetables are sautéing and cook until the butter has melted.
  3. Pour in the chicken broth and stir in the chicken bouillon.
  4. Return the shredded chicken to the pot and simmer for 10 to 15 minutes.
  5. Add the black beans, corn, Rotel, and tomato sauce. Stir well to combine.
  6. Add the cream cheese and stir until completely melted into the soup.
  7. Stir in the shredded Colby cheese until melted and smooth.
  8. Let everything cook together for another 10 minutes, stirring occasionally.
  9. Serve hot and top with guacamole, sliced jalapeños, or additional shredded cheese if desired.
