- 1 can black beans
- 1 can corn
- 1 can Rotel
- 1 can tomato sauce
- 1 block cream cheese
- 8 oz. Colby cheese, shredded
Instructions
- Season the chicken with smoked paprika, roasted garlic powder, onion powder, cayenne, cumin, chili powder, oregano, salt, and pepper, and mix well.
- Heat olive oil in a pot, then cook the chicken until done.
- Pull the chicken out, shred it, and set it aside.
- Toss the jalapeño, onion, and garlic into the same pot.
- While they sauté, drop in the butter.
- Once the butter melts, pour in the chicken broth and stir in the bouillon.
- Return the shredded chicken to the pot and let it simmer for 10–15 minutes.
- Next, add the black beans, corn, Rotel, and tomato sauce, and stir well.
- Stir in the cream cheese until it melts completely.
- Sprinkle in the shredded Colby.
- Let everything melt together for 10 minutes.

Tips for the Best Chicken Tortilla Soup
- Season hard. The chicken is the only thing seasoned directly, so taste a shred before it goes back in the pot.
- Keep the same pot. If you wash it between steps, you lose the browned bits.
- Dice the jalapeño small. Big chunks turn into surprise heat, while small pieces melt into the soup. Seed it for a milder bowl.
- Cube the cream cheese. Smaller pieces melt faster, so you won’t chase lumps around the pot.
- Shred your own Colby. Bagged shreds can melt a little gritty.
- Turn the heat down after the cream cheese. Gentle bubbles only, and no boiling.

This soup holds up well, and the flavor improves overnight. Make it a day early and keep it in an airtight container in the fridge.
When you reheat it, go slowly on the stove and stir as it warms. A high-power microwave can make the cheese separate. Freezing is hit or miss because of the cream cheese, so I wouldn’t count on it. Add toppings fresh every time.
